Ever want to whip up something nice for yourself or the family,but have just run out of ideas? Or,maybe the dish you want to make just seems to  difficult to put together? I know that sometimes when I want to cook, I turn to a good recipe book. One like Holly Clegg’s trim & TERRIFIC KITCHEN 101 :Secrets to Cooking Confidence book. Holly’s book is chock-full of amazing recipes ,and they are simple to make. Who would of thought it?

One of the best things I like about this recipe book is it’s not just for a certain setting. For example… it’s not just for dinners. It has recipes for snacking, appetizers, desserts… you name it ! Also, all the recipes in this book look amazingly tasty and they are all easy on brain AND your waistline . I have tried about 7 different recipes from the book so far, and they have all come out delicious and they were instant hits with the family and my visiting guests ! I actually plan on using the recipes in the book so that plan and cook my meals ahead of time so I can stick to a healthier eating schedule and so that my meals can fit into my exercise and workout routine ! Just take a look at one of the recipes right now, and you’ll be intrigued enough to want this book for yourself  !

1/4 cup seasoned rice vinegar
3 tablespoons olive oil
1 (0.75-oz.) envelope zesty Italian dressing mix
1 pound peeled medium shrimp, cooked
1/2 cup chopped green onions
1 (14-ounce) can artichoke hearts, drained and quartered
1/3 cup Kalamata olives, sliced or halved
1 cup grape tomato halves
1/3 cup crumbled feta cheese, optional


1.  In small bowl, whisk together vinegar, olive oil, and dressing mix. In large bowl, combine all remaining ingredients and toss with vinaigrette. Cover and refrigerate 8-24 hours, time permitting.

Makes 32 (1/4 cup) servings
